Zucchini Muffins
- Prep Time: 15 minutes
- Cook Time: 20 minutes
- Yield: 12 servings
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. ground cinnamon
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup. Shedd's Spread Country Crock® Spread Omega Plus
- 3/4 cup sugar
- 2 eggs
- 1/3 cup nonfat vanilla yogurt
- 1-1/2 cups grated zucchini, drained on paper towels (about 2 medium zucchini)

Preheat oven to 350°. Line 12-cup muffin pan with paper cupcake liners; set aside.
In medium bowl, combine flour, baking powder, cinnamon, baking soda and salt; set aside.
In large bowl, with electric mixer, beat Shedd's Spread Country Crock® Omega Plus with sugar until light and fluffy, about 2 minutes. Add eggs, one at a time, beating 1 minute after each addition. Beat in yogurt. Gradually beat in flour mixture, then zucchini, just until combined. Evenly pour into prepared pan.
Bake 20 minutes or until toothpick inserted in centers comes out clean. On wire rack, cool 10 minutes; remove from pan and cool completely. Sprinkle, if desired, with confectioners sugar.

- 1/3 cup Shedd's Spread Country Crock® Spread Omega Plus
- 1 bag (10 oz.) marshmallows
- 1/2 tsp. ground cinnamon
- 6 cups toasted whole grain oat cereal
- 1 bag (7 oz.) dried mixed fruit bits

Line 13 X 9-inch baking pan with aluminum foil, then spray with nonstick cooking spray; set aside.
In 4-quart saucepan, melt Shedd's Spread Country Crock® Omega Plus over medium heat and marshmallows and cinnamon, stirring occasionally, 4 minutes or until marshmallows are completely melted. Quickly stir in cereal and fruit. With spatula sprayed with nonstick cooking spray, evenly spread cereal mixture into prepared pan; cool 30 minutes. To serve, cut into 24 bars.

- 1/2 tsp. ground chipotle chile pepper
- 8 (6-in.) fajita size flour tortillas

Preheat oven to 425°.
In small bowl, combine Shedd's Spread Country Crock® Omega Plus, honey and chipotle chile pepper. Spread mixture on one side of each tortilla; cut each into 6 wedges. On baking sheets, arrange tortilla wedges in single layer.
Bake 8 minutes or until golden and crisp. Serve warm, or on wire rack, let cool. Store in airtight container.

In 10-inch nonstick skillet, melt Shedd's Spread Country Crock® Omega Plus over medium heat and cook vegetables and onion, stirring occasionally, 5 minutes or until tender.

- 1/2 avocado, sliced

In small bowl, combine tuna, Light Mayonnaise and jalapeno; set aside.
Evenly top two bread slices with 1/2 of the cheese, avocado and tuna mixture, then remaining cheese. Top with remaining bread slices. Evenly spread tops of sandwiches with 1 tablespoon Shedd's Spread Country Crock® Omega Plus Light.
In 12-inch nonstick skillet, cook sandwiches over medium heat, Spread side down, 2 minutes or until golden. Evenly spread tops with remaining 1 tablespoon Spread, then turn. Cook an additional 2 minutes or until golden and cheese is melted.

- 1/2 cup crumbled blue cheese or shredded cheddar cheese (about 4 oz.)
