Chunky Chipotle Chili

- 1/3 cup Shedd's Spread Country Crock® Omega Plus
- 1 small onion, chopped
- 1 small green bell pepper, chopped
- 1 clove garlic, finely chopped
- 1 tsp. ground chipotle chile pepper
- 1 lb. lean ground beef
- 1 can (16 oz.) red kidney beans, rinsed and drained

In 4-quart saucepot, melt Shedd's Spread Country Crock® Omega Plus over medium heat and cook onion, green pepper, garlic and ground chipotle chile pepper, stirring occasionally, 5 minutes or until vegetables are tender. Stir in ground beef and cook until browned, about 5 minutes. Stir in remaining ingredients. Bring to a boil over high heat. Baked Potato Soup

- 2 medium baking potatoes (about 12 oz. ea.)
- 3 cups milk
- 1/3 cup Shedd's Spread Country Crock® Omega Plus
- 1 small onion, chopped
- 1 can (14.5 oz.)chicken broth
- 1-1/4 tsp. salt
- 1-1/2 cups shredded cheddar cheese (about 6 oz.)

Preheat oven to 400°. Pierce potatoes with fork. On baking sheet, arrange potatoes and bake 1 hour or until tender; cool completely. Peel and coarsely chop potatoes. In blender, process potatoes with milk until smooth; set aside.

- 1 lb. boneless, skinless chicken breast halves, cut into thin strips

- 1 small onion, chopped

- 4 ounces Neufchatel cheese or 1/3 less fat cream cheese
- 1 box (10 oz.) frozen broccoli florets, thawed
- 8 ounces spinach bow tie pasta, cooked and drained

Season chicken, if desired, with salt and ground black pepper. In 12-inch nonstick skillet, melt 2 tablespoons Shedd's Spread Country Crock® Omega Plus Light over medium-high heat and cook chicken, stirring occasionally, 4 minutes or until almost cooked. Remove chicken and keep warm.

- 1 bag (12 oz.) cranberries
- 3/4 cup sugar
- 1/2 cup orange juice
- 1 cup chopped walnuts, toasted
- 1/2 tsp. grated orange peel

In 2-quart saucepan, melt Shedd's Spread Country Crock® Omega Plus Light over medium heat and cook shallots, stirring occasionally, 6 minutes or until very tender. - 1/2 cup firmly packed light brown sugar

In large bowl, combine sugar with cornstarch. Stir in blueberries and lemon juice. Turn into 8-inch baking dish; set aside.
